The key when pairing a dessert with a wine is to make sure the wine is sweeter. This is why the best pairings are often not too sweet treats, like Cantucci biscuits paired with Vin Santo. Contrary to common belief chocolate and full bodied red wine do not pair well together. The tannin in the wine will accentuate the bitterness and the sweetness of the chocolate will make the wine taste sour.
